A Quick & Easy Weeknight Dinner Idea

I’m working extra hard this fall on making you all kinds of one-pot, easy, family-friendly meals, and this One-Pot Sausage, Rice, and Peas Dinner has been one of our favorites! My friend Mary Younkin from the blog Barefeet in the Kitchen released a new cookbook a few weeks ago and this recipe is from it. The book is The Weeknight Dinner Cookbook: Simple Family-Friendly Recipes for Everyday Home Cooking. Doesn’t that sound like my kind of book?

Mary and I have been friends online for a few years now, and I even got the change to meet her this summer and spend a few days learning from her. She also showed me the wonder that is a cheese board, as well as virgin mojitos, so I really owe a lot to this woman. I actually helped to recipe test for for this cookbook before it was published too (so I’ve gotten to make lots of the recipes!), and it has a special place in my heart.

The Weeknight Dinner Cookbook is great not just because it features quick tasty meals, but because all the meals are also gluten-free or have gluten-free adaptations (Mary has a son who eats gluten-free, so she’s very good at making simple substitutions without the need of specialty ingredients). I love that!

Here’s how the book is divided up, which gives you a great peek at what is inside: 15-25 Minute Meals, 30-45 Minute Meals, 5-10 Minute Prep (Meals that cook on their own), Simple Side Dishes, Condiments and Spices, and Stress-Free Desserts.

So far, I’ve made and loved these recipes from the book: Mexican Seasoning Blend, Parmesan Herb Potatoes, Crunchy No-Bake Chocolate Peanut Butter Bars, Fish Tacos with Jalapeño Lime Sauce, this Garlicky Peas and Rice with Kielbasa, Chorizo and Hash Brown Oven Omelet, Unstuffed Bell Pepper Pasta, and Philly Cheesesteak Potato Skillet. All were easy and got two big thumbs up from my family. I am putting one or two of the recipes from the book on my meal plan each week because I’ve got to try them all! The Lemon Butter Pasta with Tomatoes and Hearty All-Day Chili are on my list for this week.

So this dish is awesome because it’s one-pot and so easy! I used smoked sausage that comes in onebig link because that’s all our little store carries, but you could use all kind of kielbasas or other sausages for this dish. I think something spicy would be great too. You just brown up the sausage, add rice, broth, and seasoning, let the rice cook, and then add frozen peas and some green onions. It takes so little time to make – you’re pretty much just waiting for the rice to cook, which will give you time to cut up some fresh fruit or make a salad to go on the side.

I thought this was reminiscent of a mix between fried rice and jambalaya (both of which we love). I ended up putting some hot sauce on mine and my kids wanted a little soy sauce on theirs. You are going to love this one-pot sausage dish and Mary’s cookbook! I can’t wait for you to enjoy them both.

Description

This One-Pot Sausage, Rice, and Peas recipe is an easy dinner idea that the whole family will love. Plus it takes less than 30 minutes to make!

  • 1 teaspoons olive oil
  • 1416 ounce smoked sausage (or kielbasa), sliced 1/4 inch thick
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 1/2 cups jasmine rice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 to 1/2 teaspoon kosher salt, if needed
  • 8 ounces frozen peas, about 1 1/2 cups
  • 4 green onions, sliced thin
  • 1/4 cup chopped fresh Italian parsley

Instructions

  1. Heat the oil in a large, deep-sided skillet or Dutch oven over medium high heat. Add the sausage and cook, stirring occasionally, until the sausage starts to brown and sear. Add the garlic and cook until fragrant, about 30 seconds. Add the broth, rice, garlic powder, and pepper. Stir and bring to a boil.
  2. Reduce the heat to low, maintaining a simmer, and cover with a lid. Cook for 18-20 minutes, until the rice is tender and all of the liquid is absorbed. Remove from the heat and add salt to taste. Stir in the peas, green onions, and parsley. Let the mixture rest for a few minutes before serving to heat the peas.

Notes

The amount of salt needed is going to depend on the type of broth you used, so taste as you go and adjust accordingly.

If you don’t have jasmine rice you can use any long grain white rice. I don’t recommend trying this with brown rice since it takes a long time to cook on the stove top and I’m not sure how much liquid you would need.

Seriously, why are frozen peas so good? They are always sweet and tender and I don’t use them nearly enough. They were delicious with all the savory sausage, garlic, and onions.
